It’s time for cozy evenings at home, enjoying a delicious meal to end the day. Bruno’s Pasta Company can help you have a homemade meal even on those nights you’re rushing home from a sports practice or school event. While a simple red sauce and side salad makes for a great dinner, we thought we’d give you a couple of other ideas for preparing our ravioli.

Ravioli with Fresh Tomatoes

Do you have a carton of cherry tomatoes in the fridge waiting to be used? Or, maybe you’re lucky enough to have a stash of cherry tomatoes in your freezer from your summer garden!

A delicious way to use them up is to saute them with oil, garlic, onions and basil and then toss with our cheese or spinach ravioli. It’s a quick way to prepare a fresh, light sauce while adding a burst of flavor to your dinner.

You can either cut the cherry tomatoes in half or leave them whole, then just saute them until they’re cooked down. This only takes a few minutes, and gives you a healthy dinner entree you can pair with a salad, fresh bread or whatever other side your family enjoys.

Butternut Squash Ravioli with Roasted Veggies

Roasted veggies are a perfect accompaniment to the rich flavor of our butternut squash ravioli. Though roasting veggies takes some time, once they’re in the oven you can step away and tackle something else while you wait for dinner to be done.

Roasted carrots, brussel sprouts (really!) and broccoli are all healthy and delicious options to serve alongside ravioli. You can flavor the veggies with a simple oil, garlic, salt and pepper mixture or even add balsamic vinegar to bring it up a notch. Mix in onions to add another layer of depth to the flavor.

To roast the veggies, chop them up, put your mixture of seasonings in a bowl and toss the chunks of veggies in the mixture. Then, line them up on a baking tray and pop into the oven at 400 degrees for 30 – 45 minutes.

Top the butternut squash ravioli with a light dressing of oil and sprinkle with parmesan cheese, or lightly dress with balsamic vinegar and a dash of melted butter, then serve up alongside a hearty helping of your roasted veggies.
